You have to hang on to your hat when you take a bite of Boulette – it’s a serious blast of heat and smokiness. More meaty than cheesy, this soft cheese is washed in beer, rubbed in paprika, and then shaped by hand into the distinctive cone. First made in the 15th century, Boulette d’Avesnes is made near the Belgian border and is also known as the suppositoire du diable – which is probably best left untranslated!
