It’s not a long way from Tipperary to Beechmount farm, home of Cashel Blue, Ireland’s original artisan blue cheese. This moist mild cheese is deliciously creamy and tangy, not too salty and very rich. It was first made by Jane Grubb in 1984 and since then has won many awards, including Best Irish Cheese in the World.
The rind on Cashel Blue is natural so you can tuck in to that bit too; it’s just a good as the rest of the cheese but with a stronger flavour.
