It sounds like a country dance, but Hereford Hop is actually a rather special cheddar style cheese coated in toasted hops. Mild, buttery and lemony on the inside, it’s slightly bitter and crunchy on the outside and the whole cheese has a yeasty, beery tang. It’s an old cheese that was revived by Charles Martell (the man behind Stinking Bishop) in 1988. Rather confusingly, Hereford Hop is made in Gloucestershire.
