Strong smelling with a meaty full taste and a lively lemony salty tang , this semi-soft orange rind washed cheese was known as the ‘poor man’s meat’ because so many people ate it. Today it’s also known as ‘the colonel’ thanks to the rings of raffia that bind it which are said to resemble stripes on a colonel’s uniform.
