Don't try this at home unless you like it spicy and the
distinct taste of cumin!
This mature and
strong flavoured Gouda is named after the town it was originally made in
more than 350 years ago, when Dutch sea traders started bringing cumin seeds
back from India. It is made with
semi-skimmed milk and matured for 12-18months resulting in a firm and crumbly texture. With a thin
coat of red wax on the outside this granular
cheese has an unsual browny-greeny tone of yellow.
What with? Gives
every soup a special zing! Or can easily be enjoyed on its own with some
pretzels, and a cold beer or two.
