This strong tasting cheese from Champagne-Ardenne is cream, cream and yet more cream. Buttery and velvet, it’s like a Brie with the flavour turned up. There’s a lovely rich earthiness with just the right edge of sharpness. Very, very moreish.
What with? Vignotte is so rich and so full of flavour, it only needs plain crackers and a nicely chilled Sancerre. Though is is divine in a potato dauphinoise or grilled on Portobello mushrooms. It would also makea legendary cheese toastie.
