Le Cados is unpasteurized – a precious little cheese washed in Calvados and then wrapped in toasted breadcrumbs. A mild, appley, earthy delight of a cheese with a touch of sweetness and the classic camembert tang.
The aroma might hit you for six at first but keep your nerve and dive in – you most definitely will not be disappointed. This is a truly inspired creation; the fruity Calvados is divine with the sharp cream of the cheese, while the toasted breadcrumbs add a deliciously crunchy contrast to all that buttery richness. What with? Wonderful with walnut crackers and a good glass of red like Mazets de Saint-Victor Côtes du Rhône or a heartier Bordeaux. Or indeed with a glass of Calvados – it’s almost rude not to.
