A strong mature cheddar wrapped in black wax, this gorgeous truckle is often the star of a gourmet hamper. Savoury and sharp, it’s aged for up to 12 months before you can get your hands on it. Made on Ford Farm in the Ashley Chase Estate in Dorset, it has PDO status and is only ever made by hand with the milk of cows from a thirty mile radius of the farm. We’d love to tell you the secrets of production but the owner keeps them under lock and key!
What with? When you open your lovely truckle you should really open something good and strong to go with it. A good Rioja like Beronia Gran Reserva will do it justice. Add a few crackers and a dollop of Caramelised Onion Chutney and you’ve all you need for a little feast.
