It sounds like a country dance, but Hereford Hop is actually a rather special cheddar style cheese coated in toasted hops. Mild, buttery and lemony on the inside, it’s slightly bitter and crunchy on the outside and the whole cheese has a yeasty, beery tang. It’s an old cheese that was revived by Charles Martell (the man behind Stinking Bishop) in 1988. Rather confusingly, Hereford Hop is made in Gloucestershire.

What with? Hereford Hop is obviously brilliant with a beer and is an inspired choice of cheese for a ploughman’s lunch, especially with a dollop or two of Old English Chutney with Real Ale.
