Sheep’s milk has twice the protein and fat of cow’s milk, which makes for lovely creamy cheeses like Roquefort. It also has a distinct sharp taste which gives Pecorino its delicious lemony edge. Richer in vitamins and minerals than cow’s milk, it also can be easier to digest.
