A semi soft cheese made from pasteurised cow’s milk. Mild and buttery, this cheese melts very easily.
Monterey Jack is named after David Jacks who created the cheese in Monterey California in the late 19th century. When the cheese is young it’s semi soft with a very mild taste; as it ages it hardens and develops a deeper, richer, nuttier flavour.
The fully aged cheeses are known as dry Jack and can be grated.
