Sage Derby dates back to around the 17th century when it was produced for festivals like Christmas. A mild cheddar type cheese, it has a good kick of sage which leaves a lovely aromatic tingle in your mouth. Sage was originally added to the cheese because it was thought to aid digestion and cure ailments like depression. We don’t know about that, but a slice of this addictive cheese will certainly cheer you up!
What with? Sage is often used with poultry, so Sage Derby goes very well with chicken; either cold in a salad or sandwich or melted in the stuffing. Try a subtle white wine with this. Our Cote du Rhone Mazets de Saint Victor is just that.
