The lower meadowlands of Monte Cimino provide a diversity of nectars for the spring wildflower honey which is dense but liquid and does not set until the autumn. These places all lie within the territory of ancient Etruria, homeland of the Etruscan civilisation. Spring flowering mint, lime, acacia and clover from the meadowlands of Monte Cimino are a few of the nectars which yield a sumptuously thick amber-coloured honey, rich in active enzymes, vitamins and minerals. Once it has set, it can be returned to a liquid state (if preferred) by heating gently in a bain-marie.
